Allicin is found in onions and other Allium plants. Its scientific name is diallyl thiosulfinate and its chemical formula is C6H10OS2. It is an organic sulfur compound extracted from the bulb of garlic, a plant of the Allium family. Biochemical analysis has shown that fresh garlic does not contain allicin, but contains its precursor, alliin. Alliin exists in garlic in an unstable and odorless form. After the alliin in fresh garlic is impacted (sliced or crushed), alliinase is activated, catalyzing alliin to form allicin, which is further decomposed to form sulfide with a strong odor.
